Lets make fragrant spicy couscous!
In France, the restaurants offering couscous are very easy to find! It is a little bit like having curry in England or lasagna here in the States…It is such a comforting dish! But the cherry on the cake is that this is such a healthy dish! We have a very nutritious lamb broth, plenty of vegetables, herbs and spices…
It was the choice of Adèle, my little co-host visiting from France for the year : when I asked her what would please her, she asked for couscous…comfort food away from home! I understand It might not be comfort food for you, but at least, it is a wonderful way to easily add more vegetables and nutrition to your table!
Ingredients, for about 4
1 medium onion
3 tbs tomato paste
1 tbs cumin powder
1 quart of lamb stock (use lamb bones and meat for stew in place of chicken and proceed as making chicken stock)
3 sliced carrots, 1 cup of diced cabbage, 1 cup cubed pumpkin, 1 cup cubed turnips, 1 cup sliced celery and fennel if desired.
1 can of organic chickpeas
2 cups of couscous grain
Lamb, chicken, for grilling or for meatballs (according to appetite)
Parsley, diced onion.
Harissa to add to the broth
How to make it?
You can chose to melt a diced onion in olive oil, before you add tomato paste and cumin powder. In the video, I directly use tomato paste and cumin…but do as you wish.
Once the mixture is fragrant, add the lamb stock and bring to boil.
Add sliced and diced vegetables : Pumpkin, cabbage, celery, carrots, turnips, squash, fennel etc…and the drained chickpeas.
Color the meatballs/meat in a pan. Add some stock and transfer in the vegetables.
Prepare some spicy sauce by mixing a tbs of harissa and a cup of broth in a bowl
Pour some boiling water on the semolina. Add salt, cover and let hydrate 10 mn. Then add dots of butter.
Serve right away with the spicy sauce.
